This week's smoke was a 15lb packer brisket from my friends at Yukon Sausage.

My second full brisket through Bonaparte, this was a long labour of hourly checks overnight, but the end result was well worth it!

I've been using Kingsford briquettes, but ended up finishing this on Royal Oak chunks. I'm trying to decide which i prefer, and it's not quite clear yet.
Hickory chips all the way through this beauty. Just s/p for seasonings.
